Avocados are truly amazing: packed with Vitamins K, E, C, B1, B2, B3, B5 and B6. Throw in some fiber, copper, folate, potassium zinc, iron, manganese, and magnesium and you’ve got some serious nutrition. They are also awesome when cooked on the grill. Halve them, drizzle with olive oil and lime juice and cook cut side down for 2-3minutes!

National Chocolate Cake Day

January 27th is National Chocolate Cake Day! Let’s celebrate with a low carb recipe for this classic dessert.

INGREDIENTS

  • 6 Eggs
  • 4 oz Unsweetened Baking Chocolate Squares
  • 1/2 cup Unsalted Butter
  • 1 tbsp Water
  • 3/4 cup Splenda
  • 2 tbsps Unsweetened Cocoa Powder
  • 1 tsp Vanilla Extract

DIRECTIONS

  1. Heat oven to 325°F. Grease an 8-inch cake pan dust with cocoa powder
  2. Melt the chocolate, butter and water in a double boiler. Remove from heat when melted and transfer to a mixing bowl. Allow to cool and add ¼ cup of the Splenda, the cocoa powder and vanilla extract, stirring until combined. 
  3. In a separate bowl, beat eggs with electric mixer about 6 minutes. Reduce speed and gradually add remaining ½ cup of Splenda and beat until combined. Slowly add the egg mixture to the chocolate mixture and stir until combined. 
  4. Pour batter into cake pan and smooth. Bake 40-45 minutes. It’s delicious by itself, but you can also serve with unsweetened whipped cream.

 

National Whipped Cream Day

January 5 is National Whipped Cream Day. Now that’s something to celebrate. Heres a low carb recipe for making your own whipped cream. Sprinkle in a few raspberries which are one of the lowest carb fruits.

Ingredients:

  • 1 cup heavy cream
  • 1 Tbsp Splenda® or stevia
  • 1 tsp vanilla extract

Instructions:

Using a hand mixer beat cream on high speed for roughly 30 seconds. Add sweetener and extract when cream begins to thicken.

 

Low Carb Eggnog Recipe

Eggnog

Although this recipe doesn’t contain alcohol, it’s still super yummy and gets you in the holiday spirit without adding to your waistline.

Ingredients:

  • 1 cup heavy cream
  • 2 eggs (separate whites & yolks)
  • 1/4 tsp stevia extract
  • 1/4 cup xylitol
  • 1 tsp nutmeg
  • 1/2 tsp vanilla
  • dash of cinnamon
  • dash of cloves

Instructions:
Separate yolks and whites of eggs. Beat the egg yolks with a mixer. Then add xylitol, stevia, cream, cinnamon, cloves and nutmeg mixing until ingredients are combined. In a separate bowl beat the egg whites until soft peaks form and then whisk into the first bowl. Chill for 1 hour and enjoy.

November 14th is National Pickle Day and we want to share an easy, lo carb recipe so you can make your own delicious dill pickles. This recipe requires no canning and the pickles will last up to one week in your refrigerator. If you’re not into cooking and prefer to purchase your pickles, always check the label to make sure there is no added sugar because sugar = carbs!

INGREDIENTS

  • 15-20 small cucumbers
  • 4 tbsp of sea salt
  • 4 cloves of garlic
  • 1/2 medium size onion
  • 6-10 sprigs of fresh dill
  • 1/2 cup distilled white vinegar
  • 5 cups hot water
  • any other herbs you like: basil, peppercorns, rosemary
  • 1 large pickling jar

DIRECTIONS

  • Chop onion and garlic into large pieces
  • Cut stem end off cumbers and either half or quarter them
  • Layer onions, garlic, cucumbers and herbs until jar is filled
  • Stir sea salt and vinegar into hot water until dissolved
  • Pour liquid over cucumber mixture in jar and cover with lid
  • Refrigerate for 8 hours

The pickles will be good for up to one week.
